The Centers for Disease Control and Prevention have some recommendations from their Preparedness 101: Zombie Apocalypse. 

In The Philadelphia Inquirer article "Red Cross: No Plans For Dead Walking The Earth", Liam O'Keefe, Deputy Managing Director for Philadelphia's Office of Emergency Management, stressed the importance of emergency preparedness everyday, not just the End of Days.
